Let’s All Aioli

Aioli

Everything tastes better when dipped into a delectable sauce. That’s why everyone should know how to make a classic creamy dipping sauce that everyone loves, aioli!

Aioli is great with seafood, meats, vegetables, sandwiches, basically anything. That’s why we’ve made a 1 minute video to help all the sauce lovers of the world arm themselves with an easy and delicious aioli recipe.

What you’ll need

2 garlic cloves (minced)

1 large egg yolk

2 teaspoons fresh lemon juice

1/2 teaspoon Dijon mustard

1/4 cup extra virgin olive oil

1/4 cup canola oil

pinch of salt

Makes about 3/4 cup

Grind the garlic and salt together to form a paste and set it aside for later use. In a mixing bowl, add the egg yolk, mustard, and lemon juice and whisk together. Gradually incorporate the olive oil, a little bit at a time, while whisking constantly to keep the mixture from breaking. If your mixture does end up breaking, stop adding the olive oil and whisk the mixture continuously until it becomes smooth again.

Keep adding small amounts of the oil until the mixture is thick, creamy, and completely emulsified. Use this same process with the canola oil. Pour it into the mixture slowly and whisk constantly. Make sure the canola oil emulsifies as well as the olive oil.

After the mixture is thick and opaque, add in your garlic paste and stir together. Add salt and pepper to taste. Whisk everything together one more time and enjoy!

Gygi Pro Tip: Emulsification is when one liquid is dispersed and suspended into another liquid, i.e., two different oils coming together to form a thick and creamy aioli.
