We love how versatile the jelly roll cake can be. You can stuff it with jams, jellies, curds, creams. Feel free to change out the almond extract with other flavored extracts. Just monitor the strength of each flavor and slowly add in flavoring until you reach your desired strength.

Peach Jelly Roll Cake

Peach Jelly Roll Cake

Ingredients

    Cake:
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1/2 teaspoon almond extract
  • Peach Filling:
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup confectioners' sugar, sifted
  • 1/2 teaspoon almond extract
  • 1/2 cup finely diced fresh peaches

Directions

  1. Heat oven to 375 degrees. Line a 1o-inch or quarter-sized jelly roll pan (cookie sheet) with a parchment sheet.
  2. Beat eggs in a large mixing bowl until thick and lemon-colored, about 5 minutes. Gradually beat in granulated sugar. Add water and almond extract and beat on low speed. Gradually add dry ingredients, beating just until batter is smooth.
  3. Spread batter evenly into prepared pan. Bake until toothpick inserted in center comes out clean, 12 to 15 minutes.
  4. Lightly dust a flour sack towel with confectioners' sugar. Remove cake from oven and loosen cake from edges of pan. Immediately invert cake onto the towel. Carefully remove parchment.
  5. While cake is still hot, use the towel to roll the cake. Let cake cool on a wire rack.
  6. For Filling:
  7. Beat softened cream cheese until smooth and fluffy. Add sifted confectioners' sugar and mix well. Add almond extract and mix well. Add finely diced confectioners' sugar and mix well. Add almond extract and mix well. Add finely diced peaches and mix gently (or save for the top)
  8. When cake has cooled, carefully unroll cake and spread with peach filling. Carefully roll cake up again. Sprinkle outside with confectioners' sugar. Wrap loosely with towel and store in refrigerator until serving.
