Lemon curd is a sweet spread that is versatile enough to be paired with so many delicious flavors and treats. We love spreading it on top of plain greek yogurt and bread with some fresh berries or on some tasty cookies. Your lemon curd can be used on layered cakes, pavlovas, beignets, ice cream, and lemon macarons, or in muffins, crepes, and lemon tarts. You can add some ginger to spice up the flavor of this lemon curd recipe.

Lemon Curd Recipe

Ingredients

  • 1 cup white sugar
  • 3 eggs
  • 1 cup fresh lemon juice
  • 3 lemons, zested
  • 1/2 cup unsalted butter, melted

Directions

  1. In a microwave safe bowl, whisk together sugar and eggs until smooth.
  2. Stir in lemon juice, lemon zest, and butter.
  3. Cook in microwave for one minute intervals, whisking after each minutes until the mixture is thick enough to coat the back of a metal spoon. Approx. 4 minutes.
  4. The lemon curd can last up to three weeks in the refrigerator.
