  • If you’re looking for ways to use a block of Peter’s Caramel, know this - the easiest way to consume it is to cut off a piece and eat it. Have you tried this yet?? 👍🏻 or 👎🏻It’s a fancy recipe I like to whip up after my kids are in bed! . . If I can handle a little more effort, I melt some chocolate and dip that chunk caramel in the chocolate. That is heaven. . . And the next level?? Add a sprinkle of sea salt. . . And by golly - now I have a gourmet treat, sure to satisfy every craving. . . Sea Salt Caramels are really that easy when you use Peter’s Caramel!! They are a fun treat any time.   • Silicone is caramel’s best friend. . . When you use silicone to melt your caramel, clean up is quick and easy. Caramel peels right off of silicone. . . Plus, it can easily go in the microwave - making melting so simple. And unlike glass, silicone doesn’t hold the heat. So, you can melt your caramel and handle your bowl without burning your hands! . . Another handy feature - your caramel can cool in your bowl. To get it out, just invert the bowl and the caramel pops right out. It’s amazing. . . And guess what - the same goes for chocolate!!! The melting and the clean are just as simple!! . .   • Sooo many caramel apple pics coming in this weekend!! Love it!!!! Are you making apples??? . . What toppings are you using?? OR what toppings would you use if you were making them??? . . Adding toppings is ALL about the timing!!! . . There are two timelines to follow: . . FIRST! Adding toppings directly to the caramel! This needs to be done as soon as your caramel is dipped. It needs to be sticky!! So, dip your caramel and then quickly get your toppings on. We keep the toppings in a bowl and roll the apples right into the bowl. Don’t be afraid to push them on!! Once covered with your toppings, place your apple on a piece of parchment in the fridge. The caramel will finish cooling and your toppings will stay in place. After 5-10 minutes of cooling, you can add a drizzle of chocolate for a finishing touch!! This first method works best for big chunks of topping- like peanuts, crushed candy bars, pretzels, coconut flakes, and our newest obsession: cacao nibs! . . SECOND: Adding a dip of chocolate over the caramel! For this method to work, your caramel needs to be cool before adding chocolate. So, dip the apple, let it cool for a bit and then place it in the fridge on a piece of parchment. After 5-10 minutes, remove the apple and dip in the chocolate. The cool caramel will help the chocolate set quickly, keeping it on the apple. If you want to add some fine toppings to the chocolate, wait for the chocolate to set for a bit. We watch for the edge of the chocolate to look matte instead of shiny and then add the toppings. This works great for adding cinnamon sugar, fine coconut, sprinkles, crushed Oreo, and little candies. . . So! There you have it!! Hopefully these tips will help your caramel adventures!!   • What is your caramel melting preference?? . . (A) Melt the whole block, making treats for you and a big crew. . (B) Melt a small batch, saving some for later. . . If you answered (A) and you want to melt the entire 5 pound block, we recommend melting your caramel in the oven - 200 degrees, in a pot with a lid, for 90-120 minutes. No need to stir or fuss or worry! It couldn’t be easier. . . If you answered (B) because you need a small batch or you need caramel melted quickly, the microwave is a great option. Heat in 30-60 sec intervals, stirring between. We prefer plastic and silicone bowls, because they don’t get as hot as glass!! And they clean up so well! . . Either way, we’ve found that melting the caramel to 175 degrees is the perfect temperature for dipping. Using a digital thermometer will help you find the perfect consistency. . .   • Christmas is in 76 days. 😳 . . I’m choosing not to think about it yet, BUT I’m sure someone out there is already finished with their holiday shopping. We allll have that friend. Or maybe YOU are that friend. If so, I’d like to shake your hand. . . I’m still not ready to plan my holiday gifts - but it just occurred to me that I use A TON of cellophane bags for neighbor, teacher, friend, and coworker gifts!!! . .   • The most common caramel apple complaint is “my caramel fell off of my apples!” . . Has this happened to you??? . . Ugh. All that work. All that caramel. It’s super frustrating. . . So, we’d love to share some tips for keeping your caramel where it belongs - on your apple!!!! . . (1) Use Peter’s Caramel. It is the perfect consistency for apples. It’s sooooo good, even Disneyland uses it for their apples!! . . (2) Wash your apples. Get the wax off. We use warm water and a soft scrubber or rag. But you can wash with dish soap, if you want! Just be sure you dry them very well! . . (3) Refrigerate your apples before dipping. Cold apples help the caramel set quickly. . . (4)Dip when the caramel is less than 180 degrees. Any hotter and the caramel will run right off the apple. . . (5) Hold the apple upside down until you see the caramel change from matte to glossy. Once the bottom is a little shiny, move it to a piece of parchment and put it in the fridge. 10 mins or so will help the caramel cool quickly. . . Now!!! You should know.... plain caramel apples are the hardest to keep intact. There is nothing to hold the caramel in place. It just slides right off!! So, adding some toppings (peanuts, crushed pretzel, coconut, etc) while the caramel is hot will help. Or! Once the caramel is cooled, dip the apple in chocolate, like the apple pictured here!! Either type of topping will help the caramel stay in place. . . Last - storing you apples! If it’s a plain caramel apple, I like to keep them in the fridge to keep the apple in tact. It will make the caramel a bit more tacky when it is removed, but the caramel will stay in place. . . If the apples have toppings, I leave them in a cellophane bag in a cool place for a few days and they do just fine. . . Nobody wants sad droopy apples! Hopefully these tips will help you avoid them! . . Have you experienced this before?? Do you have any more tips to share??

  • The best Rice Krispie Treat is...... . . Chewy? Soft? Crunchy? Peanut Butter?? Browned butter? Extra marshmallows??? . . What is your favorite RKT (Rice Krispie Treat)? . . Mine? It’s these salted caramel RKTs. Soft and chewy. Rich and delicious. They are loved by kids and adults and everyone in between.
